CAPPADOCIA LIES IN the center of the Anatolian peninsula on a plateau bounded by Ankara, the Turkish capital, Kayseri, the one-time capital of Cappadocia, and Konya, home of the thirteenth century mystic Mevlani and his whirling dervishes.
