Chuck roast is our weekend standby. We brown it slowly in an old-fashioned iron Dutch oven or heavy aluminum roaster. Bacon drippings, onions, celery tops, bay leaves, parsley, salt & pepper add flavor. When the meat is browned on both sides I add a little water, cover tightly, and let it barely simmer on top of the stove for about three hours, occasionally adding a little more water.
