...efficiently. The help may not reverse the chain-restaurant juggernaut, but it gives small restaurants a fighting chance. Even before the Avendra deal, many chapters had developed their own local buying programs. Under Tucson's plan, in which restaurants buy in bulk at common suppliers, Luria's Café Terra Cotta saved $100,000 on food costs last year--3% of its total sales for the year--without changing its menu. Andrew Hutto, owner of Baxter Station Bar and Grill in Louisville, Ky., used the savings from his chapter's buying group to help pay his gas and electric bill, which...

...TIME's cover art is always original and meaningful, but the illustration for "Italy vs. China," depicting Michelangelo's David and a Chinese terra-cotta soldier arm wrestling, was extraordinary. My congratulations to the artist. Montano Riva Barbaran Longare, Italy...

...Some of these pieces are not much better than those found today in the backrooms of dealers on Hong Kong's Hollywood Road. Still, there are some truly remarkable treasures on show, like the "Barbarian with Horn," a large sancai (three-color) glazed terra-cotta sculpture of an elaborately dressed man with bulging eyes, a handlebar moustache and full beard. Obviously he is not Han Chinese, and that's what makes figures from the vibrant Tang dynasty so interesting. During this period, trade along the Silk Route was at its height, and foreigners, like this Central Asian carrying a cornucopia...
