Usage:

Roll out one of the crusts into a circle and place on a flour-dusted cookie sheet. Brush the top surface of the dough with egg white. Fold in the rough edges to make a uniformly smooth edge around the circle. Spread half the chevre mixture evenly in the center, leaving 3-4 inches of dough around the edge. Spread half the onions evenly over the chevre. Fold the crust over the filling in six even folds, tucking the final fold under the first, to make a roughly symmetrical, hexagon-shaped galette. Dilute the egg yolk with 2 tbsp. water and brush the tops of the galettes. Bake, turning the sheet once of twice, for about 40 minutes to an hour—the crust should be golden brown. Let cool 10 minutes and serve...
