...dessert is a necessary evil. Chocolate Ecstasy is a towering mound of stratified richness--cream, chocolate mouse and chocolate cake soaked in kahlua--alluring enough to be devoured in spite of flagging spirits. Coconut flan sounds interesting, and for a palate cleansing option, Baja offers Key Lime Tart, a denser version of the more common Key Lime...

...readers willing to push themselves along, however, Big Trouble has substantial rewards. Whether the subject is hard-rock mining, turn-of-the-century radical politics, Darrow's literary aspirations, or the rise of the American grand hotel, Lukas' digressions are richer and denser than some other writers' entire books. He footnotes his footnotes, which ruins the tale's momentum but makes for some informative side trips. As it rises, this upwelling of warm air begins to cool, and the moisture it contains condenses first into cloud droplets and then into rain. At that point, the air--now denser because it is colder--starts to sink. But at the same time, the process of condensation that created the rain releases so much latent heat that the air around it warms up again and retains its lift...

...casual reader may believe the plumes are smoke, noxious chemicals or radioactive by-products of nuclear power. In fact, the structures are environmentally safe cooling towers, not nuclear reactors. They cool water and produce a relatively harmless plume at the exhaust when the ambient air is colder and denser than the mist released by the evaporative process. RON WRIGHT, Project Manager Ceramic Cooling Tower Co. Fort Worth, Texas...
