Before serving the main courses, Beuscher offered culinary advice and philosophizing. The immense skate came with a tutorial on how to cut sideways to avoid severing ligaments. Topped with tomato and parsley garnish, the gently flavored fish flaked easily but was definitely upstaged by the meat. The skirt steak ($20), served with potatoes, carrots and a chunk of marrow-filled bone, came with another lesson. While diners used to suck marrow out of the bone, hence the term “sucking the marrow out of life,” these days the bone comes sliced in half...

...page report with all the appalled earnestness of a freshman college paper, only with really nice 3-D color charts. At one point it reads: "An ad for a product made from ground-up shells of shrimps, crabs and lobster asks, 'Have you ever seen an overweight fish?'... In fact there is no convincing evidence that the shells of shrimps, crabs or lobsters cause weight loss." The kitchen had overly reduced the pomegranate glaze coating the duck, resulting in a sickly-sweet concoction tasting faintly of Robitussin...

...district police force, says the Taliban foot soldiers are not a problem. "They surrendered and gave us their weapons. The senior commanders have all left." Secret police watch the bazaars for any sign of subversion, sharing what they find with the special forces, which are focused on the big fish. "If it's a leader, then we got a problem," says Steve. "If we see one or two guys, we're not too concerned." For his part, President Karzai has called for national reconciliation, out of concern that mass arrests and trials are unfeasible and would be an invitation...
