Brae was slightly firmer in texture than corn-fed beef but exuded a quintessential beefy flavor that was a more than adequate reward for a little extra chewing. The porterhouse and sirloin steaks pan-grilled in an iron skillet would have done credit to any first-class steak house. A rib roast was succulent and tender, but ground sirloin and chuck were too lean to make properly moist hamburgers. Pot roast and stew cuts, though acceptable, cooked so quickly that they did not absorb the flavors of seasonings, one of the advantages of the usually fatty, long-cooking cuts...

Beefalo is a relatively new, man-bred cross between a bison (chosen for leanness) and one of the conventional cattle strains, such as Angus, Hereford and Simmental, which are prized for tenderness and flavor. A full-blooded beefalo is three-eighths bison and five-eighths bovine, according to standards set by the American Beefalo World Registry. Beefalo averages 80% less fat and 55% fewer calories than comparable cuts of ordinary beef. Two samples from animals that were fed differently were tested, with somewhat different results. Beefalo from Healey's Market in Manchester, Vt., was slightly richer, more flavorful and moister...

...scientists to adopt it. Because of the pending legal actions, Gallo refused to endorse the change, although Montagnier signed the statement. Nonetheless, Subcommittee Chairman Harold Varmus, a leading California virologist, expressed hope that the decision would help defuse "the tense legalistic atmosphere" that has tarnished AIDS research. "The emotional flavor of this branch of virology," he wryly concluded, "is not quite what it should...

...flavor of Lopez's art is peculiar and difficult to describe in the abstract. A good starting point is his small still life of a rabbit on a plate, dated 1972. It is just that, and no more: a rabbit skinned for roasting by a Spanish butcher, with its head left on; a glass plate with a scalloped edge; a kitchen table of pine covered with old cream paint, now scarred and stained, with bits of dark wood showing through; a band of gray wall with a mauve undercast. The table occupies a little over two-thirds of the depth...

...Liberal member of parliament. In the pages that follow, Cevaal and Welter are shown showering, bubble-bathing and sleeping together in the altogether. When an affronted parliamentary chairman demanded an explanation, the gladhanding lovers turned suddenly cool. Welter said that she merely wished "to give politics a romantic flavor." Cevaal, asserting, somewhat needlessly perhaps, that the couple had "nothing to hide," said that they had volunteered to pose, without charging a fee, in order to show that "politicians are human too." Unimpressed by those explanations, the Liberals last week decided to fire both of its exposed members...
