When the Vikings arrived in Iceland, their culinary concerns revolved around food preservation, not flavor. That led to distinct specialities - still enjoyed by Icelanders today - such as hrútspungar (ram's testicles pickled in whey) and hákarl (rotted shark meat that reeks of ammonia).
