Thursday, one day after the Bush administration announced plans to phase out salmonella testing for ground beef bound for school lunch programs, the administration backtracked in the face of rising consumer ire. Officials now insist they will keep the vigilant - or excessive, according to the beef industry - screening processes implemented in the final year of the Clinton administration. And while consumer groups chalked up this victory, they are well aware of new battles on the horizon, including the looming possibility of irradiating truckloads of meat rather than inspecting every piece...
...various viper venoms and synthesized nontoxic versions of them in the lab. They are talking to drug companies about doing additional research in animals and, eventually, people. If those studies pan out, Moreno says, viper-venom antibiotics could be put in everything from mouthwashes to contact lenses to fight salmonella, cholera, staph and strep...
...Scientists have been speculating for years that plying the nation's livestock with antibiotics may be creating superresistant bacteria in humans. Here's new evidence: after contact with cattle on his family's farm, a 12-year-old Nebraska boy became infected with the same antibiotic-resistant strain of salmonella that had sickened the cows. Using a "molecular fingerprint," researchers confirmed that the cow bug and human bug were indeed one and the same...
Looking to the future, researchers would like to take advantage of some of Mother Nature's own ideas to design new chemotherapy drugs. Scientists at Vion Pharmaceuticals of New Haven, Conn., are interested in co-opting a group of Salmonella bacteria that normally attack the intestines and cause dysentery. Salmonella, it happens, also happily infect all kinds of tumors, including colon cancer. By loading genetically crippled salmonella with one of the body's own cancer-fighting chemicals (a molecule called tumor necrosis factor), researchers at Vion hope to destroy or at least shrink a wide variety of cancers. Safety studies...
...COOKIN' First milk, now this. A small New Hampshire company is introducing eggs that are pasteurized in the shell. Under a patented process first hatched 10 years ago, the eggs are passed through a series of warm-water baths that kill stomach-sickening salmonella without cooking the eggs or changing their flavor. The final product is even USDA certified. When can you start eating those runny soft-boileds again? The safer eggs, sold under the brand name Davidson's, should be available on the East Coast in time for Easter and rolled out nationwide by year's end. Added cost...
