...There's nothing new about Bukhara, the award-winning restaurant in New Delhi's Maurya Sheraton Hotel, which has been operating for decades. But Bukhara was the first restaurant to take an Indian specialty item?foods cooked in a tandoor oven?and transform it into gourmet cuisine. The restaurant's look is pure Flintstones: walls of boulders, solid-wood tables and menus printed on laminated sections of tree. There's no cutlery either: you rip at great hunks of meat and swab it up with nan the size of a trash can lid. But don't let this modish coarseness...
...previously the restaurant concentrated on the rich, creamy sauces and subtle spicing of that region. Now the menu, with recipes researched and developed by Shikha Kapoor, features the crepe-like dosas of southern Indian, mustard-flavored potatoes from central India, a lamb dish with apricots from Bombay. The tandoor-baked foods of northern India are also still prominent on the menu...
Other foods done in the tandoori were also appealing. Shrimp, tangy from its marinade and blushed bright red from the tandoor, was nonetheless moist inside. Trout, Vinod Kapoor said, baked in the coolest of the three tandoor ovens, tasted quite wonderful, as thought it had been smoked. The spicing on this Kashmiri dish was subtle, just a hint of curry, possibly of cardamom, and the slightly crisped flesh tender...
...traditional Indian meal demands a healthy portion of naan--leavened bread baked in a tandoor oven-- to accompany the main course. The Club does not fail. Rogini Naan ($1.95) is lightly buttered and a welcome tonic to a mouthful of some of the spicier entrees. However, the mindful diner will not bother spending an extra dollar for Stuffed Kulcha, as the bread with cheese tastes almost exactly the same as its Rogini cousin. One can barely taste the cheese--in fact, the familiar smell of feet does not even accompany these curds...
Several local restaurants, including Skewers, Algiers Cafe, Delhi Darbhar, Border Cafe, Asmara, Tandoor and Casablanca, will provide food for the event. Gift certificates to Bertucci's will also be raffled...
