The transformation in emotional tone is partially rooted in the lyrics, which retain their visceral but heartfelt quality within an expanding thematic range. This shout-out to the gastro-pub craze is the latest addition to Chris Lutes and Matthew Curtis’s restaurant mini-Empire.
