...zillion notches above the usual run of Food Network stars, they are also typical of the new breed of chef-entrepreneur. Ducasse's unprecedented "deux fois trois etoiles"--achieved last March when Michelin inspectors gave his Paris restaurant its third star to join those already won by his Louis XV in Monte Carlo--has traditionalists sniffing that the master rarely actually cooks at either restaurant, but Ducasse likes to compare himself to an haute couture designer who depends on a team to execute his visions. "O.K., in France that's not normal," he says, "but I'm changing normality...

TIRED AND ILL WITH PROSTATE CANcer, Francois Mitterrand sat silently in a Louis XV armchair at the Elysee Palace, watching election returns. Was it only a dozen years ago that a vigorous Mitterrand, newly elected as France's Socialist President, marched solemnly up the steps of the Pantheon and placed red roses on the tombs of three leftist heroes while the streets of Paris rang with victory celebrations? ...something vaguely resembling the old Belgian Congo (the Safari Steakhouse). The decor inside the hotel is a giddy clash between the Forbidden City and Disneyland, in which virtually everything is either pink or purple -- unless it's gold. There are pink acoustic-tile ceilings, pink slot machines, pink Louis XV chairs in the reception area. There is a pink motorcycle parked in the '50s diner called Rock and Rolls, and there are pink chandeliers in Scheherazade, the restaurant overlooking the baccarat pit. (The Scheherazade is conveniently located so that gamblers below can order whatever they fancy and then gulp down...
